Crispy Feta and Mint Pastry Rolls

Instructions

    In a medium bowl, mash 200g white cheese with a fork. Mix in 15g chopped parsley, 4g dried mint, and 2g red pepper flakes until evenly combined.

    Lay 1 yufka triangle flat on a dry board with the wide base facing you. Spoon 1 generous tablespoon of filling along the base edge, leaving 1.5 cm clear at the sides.

    Fold both side edges inward over the filling to trap it. Roll the pastry tightly toward the pointed tip. Brush the tip with beaten egg white and press firmly to seal tightly.

    Repeat the rolling process with the remaining 7 yufka triangles until all 8 rolls are assembled and sealed.

    Heat 100ml sunflower oil in a large skillet over medium heat until hot and shimmering (around 170°C). Beware of hot oil splatters.

    Place rolls seam-side down into the hot oil. Fry over medium heat for 4-5 minutes, turning frequently with tongs until every side is deeply golden and crisp.

    Turn off heat. Transfer the hot rolls immediately to a paper towel-lined plate to drain excess oil for 2 minutes before serving warm.
