Crispy Buffalo Cauliflower Bites

Preheat your oven to 220°C (425°F) and line a large baking sheet with parchment paper. Cut 500 g of fresh cauliflower into bite-sized florets, about 3 cm each. Wash the florets thoroughly and pat them completely dry with a clean kitchen towel so the batter sticks smoothly.

In a large mixing bowl, combine 100 g all-purpose flour, 150 ml milk, 5 g garlic powder, and 5 g salt. Use a whisk to mix the batter until it is smooth with no flour lumps. It should have the consistency of pancake batter; if it feels too thick, stir in 1 extra tablespoon of water.

Dip each dried cauliflower floret into the batter, turning to coat evenly, then tap off any excess batter. Place the florets onto the lined baking sheet in a single layer, ensuring space between them. Bake at 220°C for 18 minutes until the edges start to turn golden and crisp.

While the cauliflower bakes, melt 40 g unsalted butter in a small saucepan over low heat. Remove from heat and whisk in 80 ml hot pepper sauce until smooth and glossy. If the sauce begins to separate, whisk vigorously for 10 seconds or add a tiny splash of warm water to re-emulsify.

Take the baking sheet out of the oven. Use tongs to gently dip each baked floret into the warm Buffalo sauce, coating completely, then return them to the baking sheet. Bake for an additional 7 minutes at 220°C until the sauce caramelizes slightly and sticks tightly to the coating.

Remove the hot cauliflower bites from the oven and let them rest on the baking sheet for 2 minutes so they stay crispy. Transfer to a serving platter while piping hot. Serve immediately with ranch dressing or celery sticks on the side for a classic spicy American snack.
