Chinese Braised Tofu with Shiitake Mushrooms
A classic Chinese home-cooked dinner of pan-seared firm tofu and shiitake mushrooms simmered in a savory soy glaze.

Pat the tofu dry with paper towels and cut into 1 cm thick rectangular slices. Slice mushrooms and chop garlic, ginger, and spring onions, separating onion white parts from green tips.

Heat vegetable oil in a large skillet over medium-high heat. Add tofu slices in a single layer and fry for 5 minutes per side until golden brown and crisp at the edges. Remove to a plate.

In the same skillet over medium heat, fry the garlic, ginger, and the white parts of the spring onions for 1 minute until soft and aromatic.

Add the sliced shiitake mushrooms to the pan and stir-fry over medium heat for 3 minutes until tender and glossy.

Return tofu to the pan. Mix soy sauce with 100 ml water, pour over tofu, lower heat to medium-low, cover and simmer for 5 minutes until sauce reduces to a light glaze.

Turn off the heat, drizzle sesame oil over the tofu, top with scallion green tips, and serve hot.
