Classic French Sauce Gribiche

    Place 2 eggs in a small pot of water, bring to a boil over medium-high heat, and cook for 9 minutes. Transfer the eggs to a bowl of ice water, peel them once cool, separate the yolks from the whites into a bowl, and finely dice the whites.

    Add the Dijon mustard, fine salt, and black pepper to the bowl with the cooked egg yolks. Use a fork to thoroughly mash and blend the yolks with the mustard until you have a completely smooth and uniform paste without any visible lumps.

    Begin adding the sunflower oil, pouring a very thin stream into the egg yolk mixture while whisking vigorously and constantly with a balloon whisk. Continue whisking until all the oil is incorporated and the sauce becomes thick, creamy, and stable.

    Pour in the red wine vinegar while continuing to whisk gently. The acid will lighten the colour and loosen the emulsion slightly to create a perfectly balanced texture. If the sauce feels too thick, whisk in half a teaspoon of cold water to loosen it.

    Add the diced egg whites and the finely chopped cornichons to the emulsified base. Use a silicone spatula to gently fold all the garnishes into the sauce until they are evenly distributed throughout without breaking down the smooth base.

    Check the taste and adjust with a pinch of salt if needed. Scoop the finished Sauce Gribiche into a chilled glass serving bowl. Serve cool alongside steamed asparagus, poached fish, or sliced roasted meats as a rich French condiment.
