Thai Coconut and Lemongrass Herb Dressing

    Wash and finely mince 15 g of fresh lemongrass (white tender inner stalk only) and slice 3 g of kaffir lime leaves into hair-thin ribbons. Peel and finely dice 30 g of shallots. Measure out 150 ml coconut cream, 30 ml fish sauce, 35 g palm sugar, and 45 ml lime juice. Set out a small saucepan.

    Pour the 150 ml coconut cream into the small saucepan and place it over medium-low heat. Gently warm the cream for about 3 minutes, stirring occasionally with a small silicone spatula, until tiny bubbles form around the edges without bringing it to a rolling boil.

    Add 35 g of palm sugar and 30 g of Thai roasted chili paste to the warm coconut cream. Stir continuously over low heat for 4 minutes until the sugar melts fully into a rich, glossy orange oil. If the mixture thickens too quickly or catches on the bottom, lower the heat slightly.

    Take the saucepan off the heat and let it cool for 2 minutes. Pour in 30 ml of fish sauce and 45 ml of fresh lime juice, then whisk gently until smooth. Taking it off heat prevents the lime juice from turning bitter or curdling the coconut fat.

    Stir in the minced lemongrass, thin kaffir lime leaf strips, and diced shallots into the sauce. Mix thoroughly so the fresh herbs release their essential oils directly into the warm liquid. The sauce will acquire a fragrant, complex herbal aroma within moments.

    Taste the dressing for balance: it should taste salty, sweet, sour, and mildly spicy all at once. Pour into a small dipping bowl and let rest for 5 minutes at room temperature to allow the flavors to marry before serving alongside Thai pomelo salad, grilled shrimp, or steamed vegetables.
