Traditional Turkish Frothy Mint Ayran

Wash the fresh mint leaves under cold water and pat them dry with paper towels. Measure out the full-fat yogurt, cold water, fine sea salt, dried mint, and ice cubes. Have a large deep mixing bowl or a tall blender pitcher and a sturdy hand whisk ready on your clean work surface.

Transfer the full-fat yogurt and fine sea salt into the deep bowl. Whisk vigorously by hand or on low speed for 2 full minutes until the yogurt becomes completely smooth, creamy, and free of any tiny lumps. This base step ensures the ayran will not separate later when water is added.

Slowly pour the cold water in a thin, continuous stream into the smooth yogurt base while whisking constantly. Keep whisking in an upward circular motion for about 2 to 3 minutes to incorporate air into the mixture. If using a blender, blend on medium speed for 1 minute until well blended.

Add the dried mint and ice cubes directly into the whisked liquid. Whisk vigorously for another full minute or pulse briefly in the blender. The cold ice cubes react with the yogurt fat and aeration to create a dense, stable froth floating on top of the refreshing liquid.

Taste the ayran carefully. If it tastes overly salty, stir in 30 to 50 ml more chilled water; if it lacks punch, whisk in another tiny pinch of salt. Ensure the drink remains light, fluid, and pleasantly tangy with fine ice crystals floating inside without thinning out the thick top froth.

Pour the chilled ayran slowly into four tall glasses, allowing the abundant foam to settle on top. Garnish each glass with a fresh mint sprig. Serve immediately alongside hot, crispy zucchini and herb fritters (kabak mücveri) for a classic Turkish combination.
