Instructions
- 1
Prepare all ingredients on the counter: measure out the tamarind paste, fish sauce, sugar, water, minced garlic, and thinly sliced red chili. Grab a small saucepan and a wooden spoon for stirring.
- 2
Place the small saucepan on medium heat. Add the warm water and tamarind paste, stirring continuously with the wooden spoon until the paste completely dissolves into the liquid.
- 3
Pour the fish sauce and add the sugar into the saucepan. Stir well and let the mixture simmer gently on low heat for 3 minutes until it thickens slightly into a glossy syrup.
- 4
Add the minced garlic and sliced red chili directly into the simmering sauce. Stir everything together and cook for 1 more minute so the flavors infuse into the liquid.
- 5
Turn off the heat and remove the saucepan from the hot burner. If the sauce looks too thick or reduces too fast, stir in a tiny splash of water to loosen it up.
- 6
Transfer the prepared dipping sauce into a small serving bowl. Let it cool down to room temperature so the flavors meld, and serve it alongside your favorite snacks or dishes.
