Instructions
- 1
Peel and mince the garlic cloves finely. Place the dried red chili flakes, minced garlic, salt, and toasted sesame seeds into a heatproof glass bowl and mix well.
- 2
Pour the vegetable oil into a small saucepan and heat it over medium heat for 3 to 4 minutes until it starts shimmering and is very hot.
- 3
Carefully pour the hot vegetable oil in two batches over the chili and garlic mixture in the bowl, stirring gently with a wooden spoon as it sizzles.
- 4
Add the soy sauce and sesame oil into the bowl immediately after pouring the hot oil, stirring continuously so all the ingredients combine well.
- 5
Let the dipping sauce rest at room temperature for 5 minutes so the flavors infuse deeply and the oil cools down slightly.
- 6
Serve the fragrant, deep red chili garlic oil dip warm in small bowls alongside dumplings, spring rolls, or stir-fried dishes.
