Moroccan Herb Chermoula Sauce

Instructions

    Wash and thoroughly dry 50 g fresh coriander and 30 g parsley with paper towels. Peel 4 garlic cloves (15 g). Measure 80 ml olive oil, 30 ml lemon juice, 5 g cumin, 5 g sweet paprika, and 4 g salt. Prepare a small skillet and a small mixing bowl.

    Finely chop the cleaned coriander and parsley leaves along with tender stems. Grate or finely mince the garlic cloves using a fine microplane or garlic press. Place the chopped herbs and garlic directly into a medium mixing bowl.

    Place the small skillet over low heat and pour in 80 ml olive oil. Add 5 g cumin and 5 g sweet paprika to the warm oil. Gently heat for 1 to 2 minutes until fragrant and tiny bubbles appear, stirring continuously with a wooden spoon so spices do not scorch.

    Immediately remove the oil mixture from the heat to prevent burning. Pour the hot spice oil directly over the chopped herbs and minced garlic in the bowl. Stir well with a spoon; the warm oil will soften the garlic sharpness and bring out herb aromas.

    Add 30 ml fresh lemon juice and 4 g salt into the sauce bowl. Whisk vigorously for 30 seconds until the oil and lemon juice blend into a glossy, slightly thickened green emulsion. Taste and adjust salt if needed.

    Transfer the chermoula dip to a shallow serving bowl. Allow it to sit at room temperature for 10 minutes before serving so the flavors meld together. Serve with warm flatbread, crusty baguette, or grilled vegetables.
