Persian Date and Walnut Omelette (Omlate Khorma)
A classic Persian breakfast skillet combining rich scrambled eggs, sweet caramelized dates, toasted walnuts, and a pinch of warm cinnamon.

Chop 200 g pitted dates into bite-sized 1 cm pieces and coarsely chop 60 g walnuts. Crack 6 large eggs into a bowl, add 3 g salt, 2 g black pepper, and whisk thoroughly with a fork until uniform. Set a medium nonstick skillet over medium heat.

Melt 20 g of butter in the skillet over medium heat. Add the chopped walnuts and toast, stirring constantly with a wooden spoon for 2 to 3 minutes until fragrant and lightly golden. Be careful not to let the butter burn; if it browns too quickly, lower the heat slightly.

Add the remaining 20 g of butter, 200 g of chopped dates, and 3 g of ground cinnamon to the skillet. Fry over medium-low heat for 3 to 4 minutes, turning the dates so they soften and gloss over without scorching. The dates will start to soften and release a caramel aroma.

Spread the date and walnut mixture evenly across the pan floor. Pour the beaten egg mixture evenly over the top. Reduce heat to low immediately. Allow the eggs to set gently at the bottom for about 2 minutes without disturbing them.

Using a silicone spatula or wooden spoon, gently push the set edges toward the center, allowing the wet egg to flow to the warm bottom. Cook over low heat for 3 to 4 minutes until the eggs are creamy and cooked through but still soft and moist. Do not overcook or the dish will become dry.

Remove the skillet from heat. The omelette should be glistening, aromatic with cinnamon, and dotted with golden walnuts and warm dates. Serve hot directly from the pan or transferred to warm plates, accompanied by fresh flatbread like sangak or lavash and hot Persian black tea.
