Classic Indian Masala Poha
A light and fluffy Indian breakfast made from flattened rice, soft potatoes, crunchy peanuts, and warm spices.

Instructions

Place the poha in a colander and rinse under cold tap water for 30 seconds. Drain completely and let it sit so the grains soften.

Heat oil in a wide skillet over medium heat. Add peanuts and fry for 2 to 3 minutes until light brown and crunchy, then scoop out onto a plate.

In the same skillet over medium heat, add the diced potatoes. Cook for 6 to 8 minutes, stirring often, until crisp on the outside and soft inside.

Add chopped onions and green chilies to the potatoes. Sauté over medium heat for 3 minutes until onions turn soft and translucent.

Lower heat to low, add turmeric powder and a pinch of salt. Stir constantly for 30 seconds until aromatic and uniformly yellow.

Gently fold in the softened poha and fried peanuts. Cover with a lid and steam over low heat for 3 minutes until hot throughout.

Turn off the heat. Stir in chopped fresh cilantro and serve warm with squeezed fresh lemon juice.
