Nigerian Beef and Tomato Stew
A comforting Nigerian stew packed with blended red peppers, tender beef, and savory tomatoes, ideal served over boiled rice.

Instructions

Put the red bell peppers, tomatoes, and half of the onion into a blender. Puree until smooth and set aside.

In a pot, place beef cubes, remaining chopped onion, salt, and 150 ml water. Boil on medium heat for 15 minutes until meat is tender.

In another deep pan, heat the vegetable oil on medium heat. Pour in the pepper puree and fry for 10 minutes until oil rises to the top.

Stir in tomato paste and garlic-ginger paste. Cook over medium-low heat for 3 minutes until fragrant and slightly darkened.

Add cooked beef cubes and their meat broth to the sauce. Simmer over low heat for 10 minutes until thick, dark red, and bubbling gently.

Remove from heat when the stew turns thick and shiny. Ladle over hot plain rice or boiled yam to serve.
