Classic American Pecan Pie

Preheat your oven to 175°C. Unroll the pie dough and gently press it into a 23 cm pie pan, crimping the edges with your fingers. Chop half of the pecan halves coarsely and set the other half aside whole for topping. Keep the crust chilled in the refrigerator while preparing the filling mixture.

In a large mixing bowl, crack the eggs and whisk vigorously for 1 minute until lightly frothy. Melt the butter in a small saucepan, let it cool slightly, then whisk it into the eggs along with the dark brown sugar, maple syrup, and vanilla extract until smooth, creamy, and sugar dissolves.

Stir the chopped pecans into the liquid egg mixture using a spatula until evenly coated. Remove the chilled pie crust from the refrigerator and pour the pecan filling inside. Carefully arrange the reserved whole pecans in neat concentric circles over the top surface so they float evenly.

Place the pie on the center rack of the preheated oven. Bake at 175°C for 40 to 45 minutes until the crust is golden brown and the filling is set around the edges with a slight jiggle in the center. If the top crust darkens too fast after 30 minutes, tent loosely with aluminum foil.

Remove the baked pie from the oven using oven mitts and transfer it to a wire cooling rack. Allow the pecan pie to cool completely at room temperature for at least 1 hour. This crucial cooling resting time allows the rich gooey filling to fully set so it slices neatly without spilling.

Slice the cooled pie into 8 equal wedges using a sharp knife. Serve warm or chilled, optionally topped with a scoop of vanilla bean ice cream or freshly whipped cream. Store any leftover slices covered in the refrigerator for up to 4 days.
