Persian Potato Kuku Bites

Boil whole potatoes in salted boiling water over medium heat for 15-20 minutes until easily pierced with a fork. Let them cool completely.

Peel cooled potatoes and mash them finely in a mixing bowl until no large lumps remain.

Add the grated squeezed onion, beaten eggs, flour, turmeric, dried mint, and a pinch of salt to the mashed potatoes.

Mix everything thoroughly with a spoon or your hands until a thick, smooth batter forms.

Heat vegetable oil in a wide frying pan over medium heat until hot and shimmering.
